Kid-Friendly & Adaptable

One of the best aspects of this Spaghetti Stir Fry is how easily it can be tailored for different palates, especially for younger eaters. If you’re preparing this for kids who might be particular about their vegetables, feel free to omit some or chop them into very small pieces to make them less noticeable. Bell peppers, for instance, add a lovely sweetness and crunch, but finely dicing them can help picky eaters enjoy them more readily. Carrots, peas, or corn are also great additions that many children enjoy.

However, I highly recommend keeping the eggs in the dish if your children love them. The scrambled eggs add a wonderful texture and richness, providing that “little extra something” that truly elevates the stir fry. Their soft, fluffy consistency blends seamlessly with the noodles and chicken, creating a more substantial and satisfying meal. The eggs also boost the protein content, making the meal even more nourishing.

This stir fry has a delightful flavor profile that subtly reminds me of one of my favorite Thai dishes: Pad Thai. The harmonious blend of savory, slightly sweet, and garlicky notes, combined with the soft noodles and varied textures, creates a similar comforting and addictive experience. It’s a fantastic way to introduce new flavors in a familiar format.

Ingredients

  • 8 oz spaghetti half a pound or about 225g
  • 1/2 pound chicken breast (about 1/4 kg) Cut into thin 1-inch strips for quick cooking
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 2 tablespoons oil use any flavorless oil like vegetable oil, corn oil, or canola oil
  • 1 cup chopped bell pepper any color works well, adding sweetness and crunch
  • 3 stems green onions (chopped) reserve some for garnish
  • 1/2 cup chopped onion yellow or white onion, diced
  • 1 1/2 tablespoons minced garlic freshly minced for best flavor
  • 1 teaspoon ginger paste or minced ginger adds a warm, aromatic depth
  • 2 large eggs optional, but highly recommended for added richness and protein
  • 2 teaspoons chicken bouillon powder for savory depth; adjust to taste

Instructions

  • 1. Cook the Spaghetti: Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook according to package instructions until al dente. It’s crucial not to overcook the pasta, as it will continue to cook slightly in the stir-fry. Drain the spaghetti thoroughly and set aside. A quick rinse with cold water can prevent it from sticking, but ensure it’s well-drained.
  • 2. Season the Chicken: Place the thinly sliced chicken breast strips in a medium bowl. Sprinkle the quarter teaspoon of salt and quarter teaspoon of ground white pepper over the chicken. Toss well to ensure that the seasoning evenly coats every piece of chicken. This step enhances the chicken’s flavor and helps create a delicious crust when cooked.
  • 3. Sear the Chicken: Heat 1 tablespoon of oil in a large wok or a wide, deep skillet over high heat for about a minute until shimmering. Add the seasoned chicken to the pot in a single layer, ensuring not to overcrowd the pan. Cook on one side for about 3 minutes until golden brown and slightly crispy. Flip the chicken pieces and cook for another 2-3 minutes on the other side until fully cooked through. Remove the chicken from the pan and set it aside.
  • 4. Sauté Aromatics: Add the remaining 1 tablespoon of oil to the same pan (no need to clean it). Let it heat up for 1-2 minutes. Add the chopped onions and sauté until they become fragrant and translucent, about 2-3 minutes. Avoid burning the onions to maintain their sweet flavor.
  • 5. Add Ginger and Garlic: Stir in the minced garlic and ginger paste (or minced ginger) with the onions. Sauté for about 30 seconds, being careful not to burn the garlic, which can turn bitter quickly. This step infuses the oil with a rich, aromatic foundation for the stir fry.
  • 6. Cook Bell Peppers: Add the chopped bell peppers to the pan and stir-fry for 1-2 minutes until they are slightly tender-crisp but still retain a vibrant color. Immediately push all the sautéed vegetables and aromatics to one side of the pan, creating an empty space in the center.
  • 7. Scramble the Eggs (Optional but Recommended): Crack the two large eggs directly into the freed corner of the pan. Let them set for a few seconds until the edges begin to firm up, then quickly scramble them with your spatula. Continue stirring the eggs until they are no longer runny and are cooked through. Once scrambled, mix the cooked eggs together with the other ingredients in the pan.
  • 8. Combine with Chicken & Spaghetti: Return the cooked chicken to the pan and stir everything gently to combine. Add the drained spaghetti to the pan. Using tongs or two spatulas, toss all the ingredients together thoroughly, ensuring the noodles are well coated with the flavorful sauce and mixed with the chicken, eggs, and vegetables.
  • 9. Season with Bouillon: Sprinkle the chicken bouillon powder over the spaghetti stir fry. Mix again to distribute the bouillon evenly, adding a delicious savory depth to the entire dish. Taste and adjust seasoning if needed; you might want a pinch more salt or pepper.
  • 10. Finish with Green Onions: Finally, add the chopped green onions to the pan. Give it one last quick toss to combine them. The green onions add a fresh, pungent finish and a beautiful pop of color.
  • 11. Serve Warm: Transfer the Spaghetti Stir Fry to plates or bowls and serve immediately while warm. Enjoy your delicious, homemade meal!

Notes

1. While I used lean chicken breasts for this recipe, you could certainly substitute them with chicken thighs for a slightly richer flavor and more tender texture. Just ensure they are cut into thin, even strips for consistent cooking.
2. The eggs are listed as optional, but I highly recommend including them! They truly add an extra layer of flavor, richness, and protein to the spaghetti stir fry, making it even more satisfying and reminiscent of classic Asian noodle dishes.
3. Feel free to customize your vegetables. Carrots, snap peas, mushrooms, or cabbage would all be excellent additions, providing more nutrients and textural variety.
4. For a touch of heat, add a pinch of red pepper flakes with the garlic and ginger, or a drizzle of sriracha when serving.
5. Ensure your wok or pan is hot before adding ingredients, especially the chicken. This ensures a proper sear and prevents the ingredients from steaming instead of stir-frying, resulting in better texture and flavor.
6. This dish is fantastic for meal prep! Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop or in the microwave.
