Beyond the Basic Omelette: A Culinary Revelation
The spaghetti omelette is more than just a quick fix; it’s a testament to how simple ingredients can create something extraordinary. Its popularity in Cameroon stems from its ability to offer a satisfying, flavorful, and incredibly comforting meal at any time of day. Unlike a traditional omelette, which focuses solely on eggs, this dish incorporates the delightful texture and heartiness of pasta, making it a more substantial and intriguing option. It’s also often referred to as a spaghetti frittata due to its thick, substantial nature and the way the ingredients are mixed throughout, rather than folded inside.
The Charm of Cameroonian Breakfast Culture
Growing up in Cameroon, breakfast at local cafeterias was a special ritual. These bustling spots, often run by Hausa men, offered a variety of simple yet incredibly flavorful dishes, and the spaghetti omelette was a shining star among them. It’s a dish that evokes nostalgia, bringing back memories of vibrant mornings, shared meals, and the rich culinary heritage of the region. The unique blend of locally available vegetables and seasonings gives it a distinct African touch that sets it apart from typical Western breakfast fare. It’s a hearty, wholesome meal that truly represents the ingenuity of Cameroonian cooking.

Ingredients
- 1 1/2 cups boiled spaghetti see Note 1
- 4 eggs
- 1/2 tomato – chopped
- 1 tablespoon chopped onion
- 1/4 green bell pepper – chopped
- 1 seasoning cube (Maggi) 4g cube
- 1 1/2 tablespoons oil
- 1/8 teaspoon ground white pepper
- 2 sprigs parsley – finely chopped
Instructions
-
In a medium-sized mixing bowl, combine the chopped tomato, onion, green bell pepper, finely chopped parsley, and cracked eggs. Crumble the seasoning cube (Maggi) over the mixture. Use a fork to gently beat and thoroughly combine all the ingredients until well integrated. Finally, add the boiled spaghetti to this mixture and mix well, ensuring the spaghetti is evenly coated with the egg and vegetable mixture.
-
Heat the oil in a non-stick skillet over high heat for approximately 2 minutes. Once the skillet is hot, reduce the heat to very low. Carefully pour the spaghetti and egg mixture into the skillet, spreading it out gently to ensure an even thickness across the pan. Allow it to cook undisturbed on very low heat for about 8 minutes, or until the egg mixture has fully set and the bottom is golden brown. Using a large spatula, carefully flip the omelette to the other side and let it cook for an additional 3 minutes, or until cooked through and golden.

Serve your delicious Spaghetti Omelette warm and enjoy!
Notes for a Perfect Spaghetti Omelette
2. If you desire a touch of heat, feel free to incorporate some chili pepper or a small amount of freshly chopped habanero pepper into the mixture. Alternatively, for those who prefer adjustable spice, simply serve the omelette with your favorite hot sauce on the side.
3. This recipe is incredibly adaptable! Don’t hesitate to customize your spaghetti omelette to your taste. You can add a variety of other chopped vegetables such as different colored bell peppers, celery, spinach, mushrooms, or even corn. For added protein, consider ingredients like cooked sausage, ham, canned sardines, or a sprinkle of your favorite cheese.
4. A critical step for a perfectly cooked omelette is to maintain very low heat throughout the cooking process. Cooking on high heat will likely result in a burnt exterior while the interior remains undercooked. Low heat ensures that the egg sets evenly and cooks through thoroughly, giving you a beautiful, golden-brown finish.
