The Ingredients For Perfection

To create this exquisite creamy chicken in white sauce, you will need a selection of fresh, high-quality ingredients. Each component plays a crucial role in building the dish’s incredible flavor profile:

  • Chicken Thighs: We highly recommend using boneless, skinless chicken thighs for this recipe. They are inherently juicier and more forgiving than chicken breasts, making them difficult to overcook and ensuring a consistently tender result. However, if you prefer, boneless, skinless chicken breasts or even chicken tenders can be used – just be mindful not to overcook them to maintain their tenderness. We do not recommend using a whole chicken for this particular recipe due to varying cooking times and the desire for uniform pieces.
  • Onions: Finely diced onions are sautéed to create a foundational layer of aromatic sweetness and savory depth for the creamy sauce. They slowly caramelize and release their flavor, enhancing the overall richness.
  • Minced Garlic: Freshly minced garlic cloves are essential for that signature pungent and comforting garlic flavor. You can easily mince fresh garlic using a garlic press or grate it with a Microplane zester. If you’re short on time, good quality store-bought minced garlic can be a convenient substitute.
  • Chicken Bouillon Powder: This secret ingredient adds an incredible depth of umami flavor that surpasses what you might achieve with standard chicken stock or broth. It’s a versatile kitchen staple that amplifies the savoriness of the sauce.
  • Salt and Pepper: Basic seasonings are key to bringing out the best in our ingredients. Regular ground black pepper works wonderfully here, but if you happen to have white pepper, it can offer a slightly milder, more refined spice that is often favored in white sauces for its subtle warmth and aesthetic appeal.
  • All-Purpose Flour: Just a small amount of all-purpose flour is used to create a roux, which acts as a thickening agent for our luscious white sauce, giving it that desirable silky consistency.
  • Unsalted Butter: Butter is crucial for sautéing the aromatics and forming the roux. It imparts a much richer, deeper flavor to the sauce compared to using just oil, contributing to the dish’s luxurious feel.
  • Heavy Cream: This is the star ingredient for achieving that irresistible creaminess. Heavy cream provides a rich, velvety texture and a decadent mouthfeel. If heavy cream is not available, unsweetened evaporated milk can be used as a suitable alternative, though the richness will be slightly different.
  • Fresh Minced Parsley: A final sprinkle of fresh minced parsley not only adds a pop of vibrant color but also introduces a fresh, herbaceous note that brightens the entire dish, giving it a professional, restaurant-quality finish. You can experiment with other fresh herbs like chives or basil if you prefer.

How to Make Chicken in White Sauce: Step-by-Step

Creating this creamy white sauce chicken dinner is surprisingly simple. Follow these easy steps for a perfect meal every time:

  1. Season and Sear the Chicken: Begin by patting your chicken thighs dry and generously seasoning both sides with half a teaspoon of salt and a quarter teaspoon of white or black pepper. Place a wide-bottom pot or a large skillet over medium-high heat. Once hot, add the chicken thighs to the pot. There’s no need to add extra oil at this stage, as the fat from the chicken will render sufficiently. Allow the chicken to cook undisturbed on one side for about 7 minutes, or until it develops a beautiful golden-brown crust. Flip the chicken to the other side and cook for another 5 minutes, or until it’s cooked through to your desired doneness. If you notice excessive splattering, reduce the heat slightly to allow it to cook more gently. Once cooked, remove the chicken pieces from the pot and set them aside.
  2. Searing chicken thighs in a hot pan to develop a golden crust.
Chicken thighs searing in a skillet, creating a delicious base.
  3. Sauté Aromatics: To the same pot where the chicken was cooked (and infused with its delicious drippings!), add the unsalted butter and allow it to melt over medium heat. Once melted, add the diced onion and minced garlic. Sauté these aromatics, stirring frequently, for about 2 minutes until they become fragrant and slightly softened. The combination of chicken fat and butter will provide plenty of richness, so there’s no need for additional olive oil.
  4. Build the Flour Base (Roux): Sprinkle the all-purpose flour into the pot with the sautéed onions and garlic. Stir continuously for 1 minute, allowing the flour to cook in the butter and create a light roux. This step is crucial for thickening the sauce and preventing a raw flour taste. Slowly pour 2 cups of water into the pot while stirring vigorously to prevent lumps and ensure a smooth sauce.
  5. Simmer and Combine Flavors: Add the chicken bouillon powder and the remaining quarter teaspoon of white (or black) pepper to the pot, stirring until well combined. Return the seared chicken pieces to the pot, ensuring they are partially immersed in the liquid. If needed, spoon some of the liquid over the chicken to cover it. Cover the pot and let everything simmer for about 5 minutes. After 5 minutes, remove the lid and give it a gentle stir.
  6. Achieve Creaminess and Final Seasoning: Add the heavy cream to the pot and stir it in gently. Let the sauce continue to simmer for another 3 minutes over medium-high heat, allowing it to thicken slightly and for all the flavors to meld beautifully. At this point, taste the sauce and adjust the seasoning as needed. I often find a little extra white pepper enhances the flavor, so feel free to add more to your preference.
  7. Finished Chicken in White Sauce, creamy and garnished with parsley.

  8. Garnish and Serve: Finally, stir in the fresh chopped parsley, then turn off the heat. Serve your exquisite Chicken in White Sauce immediately with your chosen side, such as boiled rice or pasta. For an extra touch of elegance, garnish with additional fresh parsley, transforming your plate into a restaurant-quality presentation.

Top Tip: For that final touch of culinary finesse, always garnish your Chicken in White Sauce with a sprinkle of fresh, chopped parsley. It adds vibrant color and a burst of fresh flavor, truly elevating the dish to a restaurant-quality visual and taste experience.

Creative Variations For Chicken In White Sauce

This Chicken in White Sauce recipe is a fantastic canvas for culinary creativity. Here are some delicious variations to experiment with, allowing you to tailor the dish to your taste or what you have on hand:

  • Add Mushrooms for Earthy Flavor and Texture: For a delightful addition of texture, meatiness, and extra nutrients, consider incorporating sliced mushrooms. Sauté them after cooking the chicken, remove them, then add them back into the sauce along with the chicken for a rich, earthy depth.
  • Elevate with Parmesan Cheese: Stirring in some freshly grated Parmesan cheese towards the end of cooking will add another layer of creaminess, a wonderful nutty flavor, and transform the dish into a cheesy white sauce that’s incredibly addictive.
  • Introduce a Spicy Kick with Red Pepper Flakes: If you enjoy a touch of heat, a pinch or two of red pepper flakes can provide a pleasant spicy kick, balancing the richness of the creamy sauce. Add them with the garlic and onions for a more infused spice.
  • Brighten Flavors with Acidity: A squeeze of fresh lemon juice or a dollop of sour cream (stirred in off the heat to prevent curdling) can introduce a lovely acidity that cuts through the richness of the sauce, brightening the overall flavor profile.
  • Boost Creaminess with Cream Cheese: For an even more luxurious and dense creamy texture, a few tablespoons of softened cream cheese can be whisked into the sauce until smooth, adding an extra layer of richness and tang.

Recipe FAQs: All Your Questions Answered

Here are some frequently asked questions about making Chicken in White Sauce:

What is chicken in white sauce made of?

Chicken in white sauce is typically crafted from tender chicken pieces (often thighs or breasts) cooked in a rich, creamy sauce. The base of the sauce commonly includes butter, flour (to create a roux for thickening), heavy cream or milk, and is generously flavored with aromatic ingredients like sautéed onions, minced garlic, chicken bouillon, salt, and pepper. Fresh herbs, such as parsley, are often added for a bright finish.

What is the best white wine for cooking chicken?

While this specific recipe doesn’t call for white wine, if you wish to add a touch of acidity and complexity, several white wines pair wonderfully with chicken. Dry white wines are generally preferred, such as Chardonnay (unoaked or lightly oaked), Pinot Grigio, or Sauvignon Blanc. These wines add a subtle tang and enhance the savory notes without overpowering the creamy sauce.

What is white sauce vs. Alfredo sauce?

Both white sauce (often referred to as Béchamel, a classic French mother sauce) and Alfredo sauce are creamy and delicious, but they have distinct differences in their composition and flavor. A traditional white sauce or Béchamel is made from a roux (butter and flour cooked together) combined with milk or light cream. Alfredo sauce, on the other hand, typically consists of heavy cream, butter, and a generous amount of Parmesan cheese, without the use of flour as a primary thickener, resulting in a richer, cheesier flavor profile.

What does white sauce taste of?

A well-made white sauce is characterized by its smooth, silky texture and a comforting, rich flavor. It’s often buttery and creamy, serving as an excellent base to absorb and highlight the flavors of any herbs, spices, or aromatics added to it. In this chicken recipe, it takes on savory, garlicky notes from the bouillon, garlic, and onion, making it profoundly satisfying and deeply flavorful.

Storing Leftovers and Reheating Tips

One of the great things about this Chicken in White Sauce is how well it stores, allowing you to enjoy delicious leftovers. Here’s how to handle them:

  • Storing Leftovers: Any leftover Chicken in White Sauce should be transferred to an airtight container and refrigerated promptly. It will stay fresh and delicious for 3-4 days. Ensure it cools down sufficiently before sealing and refrigerating.
  • Reheating on the Stovetop: The best method for reheating is on the stovetop. Transfer the chicken and sauce to a saucepan or skillet over medium-low heat. As creamy sauces tend to thicken significantly when cold, you will likely need to add a splash of water, milk, or a little extra cream to thin it out to your desired consistency. Stir gently and heat until the chicken is warmed through and the sauce is bubbling lightly. Avoid boiling vigorously, as this can sometimes cause the sauce to separate.
  • Reheating in the Oven: While the stovetop is preferred, you can also reheat the sauce in a baking dish in the oven. Cover the dish loosely with foil and bake at a very low temperature (around 275-300°F or 135-150°C) until warmed through. Again, you might need to add a little liquid before baking.
  • Microwave (Use with Caution): The microwave can be used for quick reheating, but be careful not to overheat, as creamy sauces can sometimes separate or become oily. Reheat in short intervals, stirring frequently, and add a little liquid as needed.

Chicken in White Sauce

Luscious Chicken in White Sauce. It is creamy, garlicky, buttery and so good! A meal fit for kings yet so easy to make. It cooks in 30 minutes!

Prep Time: 10 mins
Cook Time: 20 mins
Total Time: 30 mins
Servings: 6 servings

Ingredients

  • 2-3 pounds chicken thighs (approximately 5-6 chicken thighs)
  • 1 teaspoon salt
  • ½ teaspoon white or black pepper (divided)
  • 4 Tablespoons unsalted butter
  • 1 medium onion, diced
  • 5 cloves garlic, minced
  • 1 Tablespoon all-purpose flour
  • 2 teaspoons chicken bouillon powder
  • ½ cup heavy cream
  • 4 sprigs fresh parsley, minced

Instructions

  1. Season both sides of the chicken thighs with half a teaspoon of salt and a quarter teaspoon of white or black pepper.
  2. Place a wide-bottom pot or large skillet on medium-high heat. Add the seasoned chicken to the pot (no need for additional oil as the chicken fat will render) and cook on one side for about 7 minutes until golden brown. Flip and cook for another 5 minutes, or until cooked through. Remove chicken from the pot and set aside.
  3. To the same pot, add the butter and let it melt. Add the diced onion and minced garlic and sauté until fragrant, about 2 minutes.
  4. Add the flour to the pot and stir continuously for 1 minute to cook the flour in the butter, forming a roux.
  5. Slowly add 2 cups of water into the pot, stirring constantly to ensure a smooth sauce.
  6. Stir in the chicken bouillon powder and the remaining 1/4 teaspoon of white (or black) pepper.
  7. Return the seared chicken back to the pot. Ensure the chicken is mostly immersed in the liquid or spoon some liquid over it. Cover and simmer for about 5 minutes. After 5 minutes, uncover and stir.
  8. Add the heavy cream to the pot and let the sauce simmer for another 3 minutes. Taste and adjust seasoning as needed (you might prefer a little more white pepper).
  9. Stir in the chopped parsley, then turn off the heat.
  10. Serve immediately with boiled rice or pasta. Garnish with more fresh parsley if desired.

Notes

  • You can substitute the chicken bouillon powder with 2 standard 4g stock cubes for similar depth of flavor.
  • For those who enjoy a bit of heat, consider adding 1 teaspoon of red pepper flakes along with the garlic and onion.
  • Important for ‘Hard Chicken’ (Common in some regions of Africa): If you are using harder chicken (e.g., older hens), I recommend boiling it first with salt, pepper, and stock cubes. Then, use the chicken stock created from this initial boiling process instead of plain water in step 5 of the recipe. This ensures your chicken is tender. Feel free to leave a comment below if you have any questions.
  • Mushrooms make an excellent addition to this Chicken in White Sauce. If adding, season sliced mushrooms with salt and pepper, then sauté them in the pot after searing the chicken (before the onion and garlic). Remove them and add them back to the sauce when you return the chicken.
