My journey with this beloved dish takes me back to my secondary school days in Cameroon, specifically to my Food and Nutrition class. It was there that I first learned the art of crafting this irresistible fish in batter, a recipe that has since become a cherished classic. What makes this recipe truly special is its ability to elevate simple fried fish to an entirely new dimension of taste and texture. The secret lies in a meticulously prepared marinade and a light, crispy batter that perfectly encases the fish, locking in its natural juices and infusing it with aromatic spices.
This dish holds a significant place in West African cuisine, enjoying immense popularity in countries like Nigeria and my native Cameroon. It’s a testament to the rich, diverse flavors that characterize African cooking. The method is straightforward, yet the results are profoundly delicious, making it a favorite for home cooks and street food vendors alike. It’s a dish that embodies the spirit of community and good food, often enjoyed with family and friends, marking special occasions or simply elevating an everyday meal.

The inspiration for perfecting this particular recipe struck me unexpectedly the other day. I was going about my routine when my brother-in-law arrived with a thoughtful gift: a generous supply of fresh fish and succulent goat meat. There’s truly something special about in-laws who bring raw ingredients, sparking culinary creativity! The moment I saw the gleaming fish, I knew exactly what I had to make – my signature African Fish in Batter. The vision of that golden-brown, crispy delight immediately took hold, and I wasted no time in bringing it to life.
After crafting a batch of this delectable battered fish, I couldn’t resist sharing a sneak peek on my Instagram and Facebook pages. The response was overwhelming! Almost instantly, my inbox and comments sections were flooded with requests for the recipe. It was clear that the appeal of this super crunchy, deeply flavorful fish resonated with many, and I was thrilled to share this culinary gem. I had always planned to share it, but the enthusiastic demand only fueled my excitement to present you with what I believe will become your new favorite fish recipe.
So, here we are, ready to dive into the details of this incredible dish. The process involves delicately dipping fresh fish pieces into a perfectly seasoned batter, then deep-frying them until they achieve an irresistible golden crispness and an utterly delicious flavor. While some battered fish recipes call for beer in the batter, lending a distinct taste, my African-style batter relies on simple, good old water. This approach ensures that the natural flavors of the fish and the vibrant spices in the marinade truly shine through, resulting in a cleaner, more authentic taste that is deeply satisfying.
One of my absolute favorite ways to enjoy this crispy battered fish is alongside some semi-ripe plantain chips or classic Irish potato chips. The combination of the hot, savory fish with the sweet crunch of plantains or the salty comfort of potato chips is simply unparalleled. It’s a match made in culinary heaven, offering a delightful interplay of textures and tastes that makes every bite memorable. This pairing is a popular choice across West Africa, reflecting a common appreciation for delicious, hearty, and satisfying street food. However, don’t limit yourself! This versatile dish pairs wonderfully with a variety of sides, from a fresh garden salad to a tangy dipping sauce, making it adaptable to any palate or occasion.

Ingredients
- 2 medium fish of choice – mackerel, tilapia, etc (1-2 pounds or 1/2-1 kg) substitute with fish fillet of choice
- 1 cup flour (125 grams)
- 1/2 teaspoon baking powder
- 1/4 medium onion – roughly chopped
- 1/2 stem celery
- 2 sprigs parsley/cilantro
- 4 cloves garlic – peeled
- 1/2 inch ginger – peeled
- 1 stem green onion – chopped
- 1 small Maggi cube substitute with a teaspoon of bouillon powder
- 1/2 teaspoon salt
- 1 cup water
- Oil for frying – I used corn oil
Instructions
- Cut fish into really thin slices – about 7-8 slices per fish. Rinse thoroughly then pat dry with a paper towel to absorb excess water.
Make the marinade:
- Put ginger, garlic, onion, green onion, celery, parsley and Maggi/bouillon powder in a blender. Add two tablespoons of water and blend into a smooth paste.
- Add 1/4 teaspoon of salt and a heaping tablespoon of the prepared marinade on the fish. Mix well with your hand to ensure the marinade coats all angles of the fish. Set aside to let the flavors meld.
Make the batter:
- From the one cup of flour, remove about a quarter cup and place on a separate plate. This will be used for initial coating.
- To the remaining flour, add a tablespoon of the marinade, baking powder, 1/4 teaspoon of salt, and half of the water. Mix until smooth.
- Gradually add the remaining water and continue mixing until you achieve a smooth batter with a consistency similar to a thick crepe batter.
To make the fish in batter:
- Heat oil on high heat in a deep pot or fryer for about 5 minutes. Once hot, reduce the heat to medium.
- Take a fish slice, coat it lightly in the reserved quarter cup of flour on the plate, then dip it into the prepared batter to coat properly.
- Carefully place the coated fish slice into the hot oil. Repeat this process with all the fish slices, ensuring not to overcrowd the pot.
- Allow the fish to fry on medium heat for about 5 minutes on each side, until beautifully golden brown and crispy. In total, the fish should spend approximately 10-15 minutes in the oil.
- Once the fish reaches a gorgeous golden-brown color, remove it from the oil and place it on a rack lined with paper towels to absorb any excess oil.
- Serve immediately and enjoy as is, or with your choice of chips or other accompaniments.
Notes
- If you prefer a spicy kick, feel free to add a little cayenne, chili, or habanero pepper to your batter.
- Don’t waste any leftover batter! You can add an egg to it and make a delicious savory crepe or pancake.
