Why This Chicken and Shrimp Fried Rice Will Become Your New Favorite

Fried rice is a beloved classic across many cultures, and here on the blog, you’ll find an array of delicious variations, from the aromatic Coconut Fried Rice to my incredibly flavorful general Fried Rice recipe. However, today, our spotlight shines brightly on the magnificent duo: chicken and shrimp. This pairing isn’t just a simple addition; it’s a harmonious blend that brings both rich savory notes from the chicken and a delicate sweetness from the shrimp, creating a complex and utterly enjoyable experience in every bite. If you’ve never had the pleasure of tasting these two proteins together in a single meal, prepare to be amazed. I wholeheartedly urge you to give this combination a try.

The Secret to Unforgettable Flavor: Our Unique African Twist

What sets this particular fried rice apart is its foundation in robust African flavors. We start with high-quality basmati rice, which I adore for its fragrant aroma and elegant, long grains that separate beautifully after cooking. While basmati is my preference, feel free to use your favorite rice; parboiled rice, for instance, is another excellent option known for its resilience and ability to absorb flavors without becoming mushy. The magic begins when the rice is cooked in a flavorful broth, infused with aromatic spices that lay the groundwork for a truly epic dish.

Next, we perfectly sear the chicken and shrimp, ensuring they are tender and flavorful. This step is crucial for building layers of taste. After removing the proteins, the same pot is used to sauté a medley of onions and a special blend of spices. This aromatic base is then combined with fresh, vibrant vegetables, followed by the pre-cooked rice. A quick stir-fry brings everything together, resulting in a sensational fried rice that’s bursting with the bold and comforting essence of African cuisine.

This recipe is a genuine party for your taste buds, and a significant contributor to its brilliance is the inclusion of fresh vegetables. The key is to avoid overcooking them. By adding them at the right moment and stir-frying them quickly, the vegetables retain their crispness, vibrant colors, and nutritional value. Ingredients

  • 2 1/2 cups basmati rice (sub with parboiled rice if desired)
  • 1 1/2 cups shrimp – peeled and deveined
  • 1 pound chicken breast – cut into 1-inch slices (about 1/2 kg)
  • 5 garlic cloves – peeled
  • 1 inch ginger root – peeled
  • 1 sprig parsley
  • 1/2 teaspoon ground white pepper
  • 2 bay leaves
  • 1/2 teaspoon curry powder
  • 3 small cubes Maggi (about 4g per cube) or 3 teaspoons of chicken bouillon powder
  • 1 cup oil – (canola or your preferred cooking oil)
  • 1 cup chopped onion (from half a large onion or 1 medium onion)
  • 1 stem green onion – chopped
  • 2 medium carrots – chopped
  • 1 handful green beans – chopped
  • 3/4 cup sweet corn (frozen is fine)
  • 3/4 cup sweet peas (frozen is fine)
  • Salt to taste

Instructions

  • Prepare the aromatic paste: In a blender or food processor, combine the peeled garlic cloves, ginger root, and parsley with a small amount of water. Blend until a smooth paste forms. This paste will infuse incredible flavor into your chicken and shrimp.
  • Season the proteins: Lightly season the peeled and deveined shrimp with a pinch of salt and 1/4 teaspoon of white pepper. For the chicken breast slices, use 1/4 teaspoon of salt and the remaining 1/4 teaspoon of white pepper. Add half a teaspoon of the freshly blended garlic-ginger-parsley paste to the chicken and another half teaspoon to the shrimp. Mix both the chicken and shrimp thoroughly to ensure they are evenly coated with the seasoning. Set aside to marinate briefly while you prepare the rice.
  • Cook the rice: Rinse the basmati rice under cold water about 4-5 times until the water runs clear. This removes excess starch, preventing the rice from becoming sticky. Place the washed rice in a pot. Add 2 cups of water, a teaspoon of salt, the bay leaves, curry powder, and the Maggi cubes (or chicken bouillon powder). Stir everything well to combine. Cover the pot and bring it to a boil over high heat. Once boiling, reduce the heat to medium-low and allow the rice to cook until all the liquid has been absorbed. Add 1 more cup of water, cover again, and let it cook until this liquid is also fully absorbed and the rice is tender. Remove from heat, keep covered, and let it rest for about 5 minutes. Then, gently fluff the rice with a fork and spread it out on a large tray or baking sheet to cool completely. Cooling the rice helps it dry out slightly, which is essential for a good fried rice that doesn’t clump together. (Refer to Note 1 for an advanced tip on preparing rice.)
  • Cook the shrimp: Heat 1 cup of oil in a large pot or wok over medium-high heat for about 3 minutes. Add the seasoned shrimp to the hot oil and cook for approximately four minutes in total, flipping halfway through. Shrimp cooks quickly, so be careful not to overcook it, or it will become tough. Once cooked through and slightly pink, remove the shrimp from the pot and set aside.
  • Cook the chicken: Using the same oil in the pot, add the seasoned chicken slices. Cook for about four minutes, similar to the shrimp, flipping them halfway through to ensure even browning. Once the chicken is cooked through and lightly golden, remove it from the pot and set aside with the shrimp.
  • Build the flavor base: In the same pot with the remaining oil, add the chopped onions and green onions. Sauté for about 3 minutes, or until the onions become translucent and fragrant. Then, stir in the rest of the garlic-ginger-parsley blend. Continue to cook for another 2 minutes, allowing the flavors to meld beautifully.
  • Add the vegetables: Introduce the chopped carrots and green beans to the pot and stir well. Next, add the sweet corn and peas, stirring again to combine. Cook for a couple of minutes, ensuring the vegetables remain crisp and vibrant.
  • Combine everything: Return the cooked chicken and shrimp to the pot with the vegetables and aromatic base. Stir everything together gently. Finally, add the cooled, fluffy rice to the pot. Stir-fry constantly, ensuring all the ingredients are well incorporated and the rice is evenly coated with the delicious flavors.
  • Finish and serve: Let all the ingredients sizzle together in the pot for about 2 minutes. Remember, we want the vegetables to retain their crunch, so avoid overcooking. Turn off the heat immediately and serve your spectacular African Chicken and Shrimp Fried Rice hot!

Notes & Expert Tips

1. The Day-Old Rice Advantage: For the absolute best fried rice texture, consider boiling your rice a day in advance. Day-old rice is cold and dry, making it less prone to breaking and clumping when stir-fried, resulting in perfectly separate grains. If cooking on the same day, spread the freshly cooked rice thinly on a tray and let it cool completely, even refrigerating for an hour or two if time permits.
2. Customize Your Heat: If you enjoy a fiery kick in your fried rice, feel free to add some hot pepper when blending the garlic, ginger, and parsley. Habanero, Scotch bonnet, or your favorite chili pepper will provide a wonderful burst of heat. Adjust the amount to your preference.
3. Color Preference: If you prefer your fried rice to have a whiter appearance rather than a subtle yellow hue, you can simply omit the curry powder from the rice cooking step. The curry powder contributes to both color and flavor, so decide based on your taste and aesthetic preferences.
4. Wok vs. Skillet: While a large pot works perfectly fine, a wok is ideal for fried rice due to its high sides and ability to distribute heat evenly, allowing for efficient stir-frying. If using a skillet, ensure it’s large enough to prevent overcrowding, which can steam the ingredients instead of frying them.
5. High Heat is Key: Fried rice thrives on high heat. Ensure your pot or wok is thoroughly heated before adding ingredients, and keep the heat consistent throughout the stir-frying process. This helps achieve that desirable smoky “wok hei” flavor.
