Mastering the Flaky Crust: A Butter-Rich Revelation
The foundation of any great pie is its crust, and for our Cameroonian Fish Pie, we’ve gone above and beyond to create a pastry that is truly spectacular. We’ve significantly increased the butter content in this recipe, transforming the texture into something heavenly. Imagine a crust so soft it practically dissolves, yet so perfectly crumbly it leaves you craving more. This rich, buttery crust provides the ideal contrast to the savory filling, creating a harmonious balance that defines authentic Cameroonian comfort food. It’s a testament to how simple ingredients, when used with intention, can create culinary masterpieces.

Streamlining Your Pie-Making: The Hand Pie Maker Advantage
While the traditional method of rolling out dough and cutting perfect circles has its charm, we’re all about making your baking experience as enjoyable and effortless as possible. That’s why, instead of laboriously shaping individual pies as we did in our previous recipe, we’ve embraced the convenience of a hand pie maker for this version. This clever kitchen gadget makes shaping your fish pies incredibly easy and consistent, ensuring each pie is perfectly sealed and beautifully formed. It’s a fantastic tool for saving time and achieving professional-looking results right in your home kitchen. For those who enjoy efficiency without compromising on taste or presentation, a pie maker is a true game-changer.

Ingredients
For the dough
- 3 cups all purpose flour (360 g) plus 2 tablespoons for dusting
- 1 1/2 cups unsalted butter – the butter should be softened
- 1/4 cup cold water
- 1 teaspoon salt
- 1/2 teaspoon baking powder
For the filling
- 2 tins of sardines in oil (125 g each)
- 1 medium carrot – shredded
- 2 stems green onions – chopped
- 1/2 a small onion – chopped
- 2 garlic cloves – minced
Instructions
-
To make the filling, pour half of the oil from one can of sardines into a skillet. Let it heat up on medium heat then sauté the onions until fragrant. Add in garlic and stir then add in the green onions and carrots. Mix until well combined then you push the vegetables to one side of the pan. Put in all the sardines without the oil into the pan. Then mash them, being careful not to make it too mushy. Mix the mashed fish together with the sautéed veggies and turn off the heat.
-
To make the dough, combine flour, butter, salt and baking powder in a bowl. Mix using your fingers until the mixture looks like breadcrumbs. Add the cold water and mix to form a dough.
-
To make the pie, roll out about 1/8th of the dough and place on an open large hand pie maker. Put in two tablespoons of the filling. Then press the hand pie maker together to seal the edges. Repeat process with the rest of the dough. If you do not have a hand pie-maker, simply roll out the dough into a large rectangle then use something with a round edge like the lid of a small pot to form circles on the dough. Place your filling in the middle of each circle then cover to form a half moon. Press the edges with a fork so they seal.
-
Place pies on a baking tray lined with parchment paper. Beat an egg then use a pastry brush (or your hands) to rub the egg all over the pies.
-
Bake in an oven at 350 degrees F (180 degrees C) for 20 minutes.

Tips for Perfecting Your Cameroonian Fish Pies
Achieving the perfect Cameroonian Fish Pie is easier than you think, especially with a few helpful tips:
- Dough Consistency: The key to a flaky crust is not to overwork the dough. Mix until just combined, creating a shaggy mixture that resembles coarse breadcrumbs before adding water.
- Cold Ingredients: Always use cold butter and cold water for your dough. This prevents the butter from melting too quickly, creating those desirable pockets of steam that lead to flakiness.
- Filling Variations: While sardines are traditional, feel free to experiment. Canned tuna or mackerel can also make excellent fillings. You can also add a pinch of cayenne pepper for a subtle heat, or other finely diced vegetables like bell peppers for extra flavor and nutrients.
- No Pie Maker? No Problem! As mentioned in our recipe notes, if you don’t own a hand pie maker, simply roll your dough into a rectangle and use a round cutter (like a glass rim or a small pot lid) to cut circles. Place the filling on one half, fold the other half over to create a half-moon, and crimp the edges firmly with a fork to seal.
- Egg Wash for Golden Perfection: Don’t skip the egg wash! It gives the pies a beautiful golden-brown sheen and a slightly crispier exterior.
- Storage: Baked fish pies can be stored in an airtight container at room temperature for up to 2 days, or refrigerated for up to 4 days. They also freeze beautifully for up to 1 month. Reheat in a warm oven for best results.
