Welcome, food lovers! If you’ve ever savored the sweet, comforting taste of perfectly cooked plantains, you know they’re more than just a fruit – they’re a culinary experience. A staple in many Western African and Caribbean households, plantains offer a delightful versatility that makes them a cherished ingredient worldwide. For those new to this tropical delight, plantains are often larger than common bananas, with a thicker skin and a starchier texture. While unripe plantains are packed with nutrients and can be enjoyed in savory dishes, it’s the ripe, sweet ones that truly capture our hearts and palates, transforming into a soft, caramel-like treat.
My kitchen often revolves around plantains, and you’ll find an abundance of plantain recipes here on the blog. I truly believe plantains are one of life’s simplest, most profound blessings, offering comfort, flavor, and a touch of the tropics in every bite.

Why Grilled Plantains Are a Must-Try
Deep-fried ripe plantains hold a special place in many cuisines – there’s an undeniable magic that happens when a ripe plantain meets hot oil. That golden, crispy exterior giving way to a soft, sweet interior is truly a culinary marvel. However, for those seeking a lighter, equally delicious alternative, grilling plantains is an absolute game-changer. Grilled plantains offer all the sweetness and tenderness you crave, with a smoky depth and beautiful char marks, all while being significantly healthier. They make an ideal side dish for a variety of meals, from grilled fish to hearty stews, or simply enjoyed with a creamy slice of avocado.

The idea for this recipe actually came from you, my wonderful readers! After sharing a photo of grilled plantains and avocado on Facebook, I received numerous requests for the recipe. It’s truly a simple yet incredibly satisfying way to prepare plantains, and I’m thrilled to share it on the blog. I even created a video tutorial to walk you through each step. The Ultimate Guide to Perfectly Grilled Plantains
Understanding Plantains: More Than Just a Banana
Plantains are a fascinating fruit, often mistaken for their sweeter cousin, the banana. However, they are botanically distinct and play a different role in global cuisine. Originating in Southeast Asia, plantains were introduced to Africa and the Caribbean centuries ago, where they quickly became a fundamental food source. Unlike dessert bananas, plantains are starchy and low in sugar when green, requiring cooking before consumption. As they ripen, their starches convert to sugars, making them incredibly sweet and versatile for various culinary applications.
Beyond their delicious flavor, plantains are nutritional powerhouses. They are rich in complex carbohydrates, providing sustained energy. They are also an excellent source of dietary fiber, promoting digestive health. Furthermore, plantains boast significant amounts of essential vitamins and minerals, including Vitamin C, Vitamin A (especially in their ripe, yellow state), Vitamin B6, and potassium, which is crucial for heart health and muscle function. Choosing to grill plantains allows you to enjoy these benefits in a healthy way, minimizing added fats often associated with frying.
Selecting the Ideal Plantain for Grilling
The secret to incredible grilled plantains lies in choosing the right ripeness. For this recipe, we’re aiming for sweet, tender results, which means ripe plantains are essential. Look for plantains that are mostly yellow with a generous scattering of black spots or streaks. The more black spots, the sweeter and softer the plantain will be. Avoid entirely green plantains, as they will be starchy and less sweet when grilled, and completely black, mushy plantains, which might be overripe for grilling and too soft to handle. A perfectly ripe plantain will yield slightly to gentle pressure but still feel firm enough to hold its shape.
Prepping Your Plantains for the Grill
Preparation is key to ensuring even cooking and beautiful grill marks. First, peel your ripe plantains. This can sometimes be a bit trickier than peeling a banana, especially if they are very ripe. A helpful trick is to cut off both ends, then score a shallow line lengthwise along the skin, being careful not to cut into the flesh. You can then easily peel back the skin from this incision. Once peeled, you have several options for cutting:
- Halves: As instructed in the recipe, cutting them in half lengthwise is a classic approach, providing large, satisfying pieces.
- Rounds: Slicing them into 1/2-inch thick rounds is great for smaller bites and allows for more surface area to get those delicious grill marks.
- Planks: Cutting them into long, flat planks (about 1/2-inch thick) offers a different presentation and is excellent for sandwiches or wraps.
For this oven-grilling method, halving them lengthwise is ideal. Once cut, lightly brush both sides of the plantains with a neutral oil like canola, vegetable, or even a light olive oil. This prevents sticking and helps in achieving that beautiful golden-brown char. No need for heavy seasoning at this stage; the natural sweetness is the star, but a tiny pinch of salt can enhance the flavor profile if desired.

Ingredients
-
4 ripe plantains -
1 tablespoon oil (canola, vegetable, or light olive oil recommended)
Instructions
-
Preheat your oven to the grill/broil setting. Lightly brush a grill pan or a regular oven tray with your chosen oil.
-
Peel the ripe plantains. Carefully cut each plantain in half lengthwise, from top to bottom. Place the plantain halves, cut side down, onto the prepared tray. Place the tray in the preheated oven and grill for approximately 20 minutes. About halfway through the cooking time (after 10 minutes), you may carefully flip the plantains to ensure even grilling and beautiful grill marks on both sides. However, if your plantains are exceptionally soft and ripe, they might be difficult to flip without breaking; in this case, it’s best to leave them as they are and allow them to cook through on one side.
-
Serve your warm, grilled plantains immediately with your favorite accompaniment! They are incredibly versatile and pair wonderfully with grilled meats (chicken, beef, or fish), a fresh dollop of guacamole, a spicy pepper sauce, or even a simple side of scrambled eggs for a hearty breakfast. Enjoy the naturally sweet and tender flavors!

Serving Suggestions and Flavor Pairings
Grilled plantains are incredibly versatile and can elevate almost any meal. Their sweet and slightly smoky flavor makes them a fantastic accompaniment to savory dishes. Here are some ideas for how to enjoy your perfectly grilled plantains:
- With Protein: Serve them alongside any grilled or roasted meat – chicken, steak, pork, or especially grilled fish. The sweetness of the plantains beautifully complements the savory flavors of the protein.
- As a Side Dish: They pair wonderfully with rice and beans, stews, curries, or even a simple green salad for a balanced meal.
- With Avocado: As mentioned, a simple side of creamy avocado or a fresh guacamole offers a delightful contrast in texture and flavor.
- Spicy Enhancements: For those who love a kick, a drizzle of pepper sauce or a sprinkle of chili flakes can add an exciting dimension to the sweet plantains.
- Breakfast or Brunch: Don’t limit them to dinner! Grilled plantains are superb with scrambled eggs, fried eggs, or alongside a hearty breakfast burrito.
- Dessert: While savory pairings are common, their inherent sweetness also makes them a surprisingly delightful addition to desserts, perhaps with a scoop of vanilla ice cream or a sprinkle of cinnamon.
Tips for Grilling Success & Common Questions
- Don’t Overcrowd the Pan: For best results and even cooking, ensure there’s enough space between your plantain pieces on the grill pan or tray. Overcrowding can steam the plantains instead of grilling them, preventing that desirable caramelization and browning.
- Adjust Cook Time for Ripeness: Very ripe plantains (almost black) will cook faster and be softer. Less ripe plantains (more yellow with fewer black spots) will take longer to soften and sweeten. Keep an eye on them and adjust cooking time as needed.
- Achieving Grill Marks: For prominent grill marks, ensure your grill pan or oven tray is adequately hot before placing the plantains. Once placed, resist the urge to move them too soon. Let them sit for a few minutes to develop those beautiful lines before flipping (if desired).
- Outdoor Grilling Option: If using an outdoor grill, preheat it to medium heat. Lightly oil the grill grates before placing the plantains directly on them. Grill for 3-5 minutes per side, or until tender and beautifully charred.
- Storing Leftovers: Leftover grilled plantains can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in the microwave or oven until warm.
