Cooking Salmon In a Grill Pan: Stovetop Excellence
Achieving perfectly grilled salmon doesn’t always require an outdoor grill. With the right equipment, you can master succulent, flavorful salmon right on your stovetop. For this pan-grilled salmon recipe, a heavy-bottomed skillet, such as a large cast iron skillet, or a dedicated grill pan, is ideal. These pans excel at retaining and distributing heat evenly, which is crucial for developing that desirable crispy crust and ensuring the fish cooks through beautifully.
This method is incredibly efficient, allowing you to prepare a gourmet-quality meal in a minimal amount of time. It’s also remarkably foolproof, making it accessible for cooks of all skill levels. Essential Ingredients For Pan Grilled Salmon
Crafting perfectly pan-grilled salmon requires just a few high-quality ingredients. The magic happens when fresh salmon meets a thoughtfully blended mix of dried spices and herbs, elevated by a touch of good oil. Here’s a detailed look at what you’ll need:

- Salmon Fillets: The foundation of our dish! You can use either fresh or thawed frozen salmon fillets. While wild-caught salmon is often preferred for its robust flavor and nutritional profile, responsibly farmed salmon is also an excellent choice. Look for labels indicating sustainable practices. I frequently opt for wild sockeye salmon or Atlantic salmon for their rich taste and firm texture in this recipe.
- Ground White Pepper or Black Pepper: I personally love the subtle yet distinct flavor of white pepper with fish; it truly complements salmon beautifully without overpowering it. However, if white pepper isn’t readily available, ground black pepper works just as wonderfully and adds a classic peppery kick.
- Aromatic Spices and Herbs: This carefully curated blend elevates the salmon’s natural flavor. You’ll need a combination of:
- Garlic Powder or Granules: For a savory, aromatic base.
- Onion Powder or Granules: To add depth and a hint of sweetness.
- Dried Basil: Lending a delicate, slightly peppery, and sweet herbal note.
- Paprika Powder: Contributing a mild, earthy flavor and a beautiful reddish hue to the crust.
- Dried Parsley: Offering a fresh, clean herbal finish.
- Olive Oil: A light olive oil is perfect here, as it provides a neutral base for searing without imparting too strong a flavor. Alternatively, any neutral-tasting oil with a high smoke point, such as vegetable oil, canola oil, or avocado oil, will work effectively.
Remember to check the full recipe card below for precise quantities of each ingredient to ensure your salmon is seasoned to perfection.
Top Tip: Always season salmon just before you’re ready to cook it. If seasoned too far in advance, the salt can draw moisture out of the fish, leading to a drier, less tender result. Timing is key for maximum juiciness!
Crafting the Perfect Salmon Seasoning
Creating your own homemade salmon seasoning is incredibly simple and delivers a flavor profile far superior to many store-bought blends. This dry rub is the secret to achieving restaurant-quality pan-grilled salmon right in your own kitchen!
To make this versatile seasoning, simply combine garlic granules (or powder), onion granules (or powder), salt, white or black pepper, dried parsley, dried basil, and paprika powder in a small bowl. Mix thoroughly until all the spices are evenly distributed. This blend offers a harmonious balance of savory, aromatic, and subtly sweet notes that perfectly complement the rich flavor of salmon.

While this pan-fried salmon dry rub is specifically designed to enhance salmon, its robust and well-rounded flavor makes it fantastic on other proteins too! Don’t hesitate to experiment by using it to season a juicy steak, flavorful pork chops, or crispy chicken thighs. You’ll be amazed at how versatile and delicious it is!

Crucial Tip: For the most evenly cooked and tender Pan Grilled Salmon, always ensure your fish is at room temperature before it hits the pan. Cold fish will cook unevenly, with the exterior potentially overcooking before the center reaches the desired doneness. To achieve this, simply remove the salmon fillets from the refrigerator approximately 20-30 minutes before you plan to start cooking.
Step-by-Step: How To Pan Grill Salmon
Follow these simple steps to achieve perfectly pan-grilled salmon with a desirable crispy skin and tender, flaky interior:
- Prepare the Salmon Fillets: Begin by gently patting both sides of your salmon fillets completely dry with paper towels. This crucial step removes excess moisture, which is essential for developing that coveted golden, crispy crust when the fish hits the hot pan.
- Season Generously: In a small bowl, combine all the ingredients for your salmon seasoning (salt, pepper, garlic powder, onion powder, paprika, dried basil, and dried parsley). Sprinkle approximately one teaspoon of this flavorful blend evenly over each salmon fillet. Using your fingertips, gently rub the seasoning into the fish, ensuring it adheres well to all sides, including the edges. This creates an even coating that will crisp up beautifully.

- Heat the Pan: Place your preferred pan – ideally a cast iron skillet or a good quality grill pan – over medium heat. Allow it to heat thoroughly for a few minutes. Once hot, add the olive oil (about one tablespoon for the first batch) and swirl it around to coat the bottom of the pan evenly. Wait until the oil is shimmering and just beginning to smoke slightly; this indicates it’s hot enough for a perfect sear.
- Sear the Salmon (Skin-Side Down First): Carefully place the seasoned salmon fillets into the hot skillet, skin-side down (if your fillets have skin). Cook undisturbed for approximately 3 to 5 minutes, depending on the thickness of your fillets. During this time, the skin will become delightfully crispy and golden brown, and the flesh will begin to turn opaque from the bottom up. Avoid overcrowding the pan; cook in batches if necessary to maintain consistent heat.
- Flip and Finish: Using a fish spatula (which is ideal for delicate fish), carefully flip the salmon fillets to the other side. Continue cooking for another 3 to 4 minutes, or until the fish is opaque throughout and easily flakes when gently pressed with a fork. The internal temperature should register 145 degrees Fahrenheit for optimal doneness. For juicier fish, remove it from the heat at around 140 degrees F, as it will continue to cook slightly while resting.

And there you have it – perfectly pan-seared salmon with a beautiful crust and juicy interior! For the absolute best results, transfer the cooked salmon to a plate and loosely tent it with foil. Let it rest for about 5 minutes before serving. This brief resting period allows the juices to redistribute throughout the fillet, resulting in an even softer, more succulent, and flavorful fish.
For a bright and fresh finish, squeeze a wedge of fresh lemon juice over the cooked salmon just before serving. A sprinkle of minced fresh parsley also adds a lovely pop of color and herbaceousness. Alternatively, you could whip up a simple lemon butter sauce and drizzle it generously over the tender fish for an extra layer of richness.

Expert Tips for Foolproof Pan Grilled Salmon
Achieving consistently perfect pan-grilled salmon is easy when you follow these expert tips:
- Pat Dry, Always: This cannot be stressed enough. Using paper towels to thoroughly pat down the salmon fillets on all sides removes surface moisture. This is critical for achieving a beautiful, crisp crust and prevents the fish from steaming instead of searing.
- Choose the Right Pan: A heavy cast iron pan is my top recommendation due to its superior heat retention and even heat distribution, which are key for searing. A high-quality nonstick pan also works wonderfully, as it makes flipping the delicate fish incredibly easy. If using a stainless steel skillet, ensure it’s generously greased with oil to prevent sticking, as salmon can easily adhere to its surface.
- Hot Pan, Hot Oil: Always add your salmon to a preheated pan with hot, shimmering oil. This initial burst of heat creates an immediate sear, locking in moisture and forming that desired crust.
- Start Skin-Side Down (If Applicable): If your salmon fillets have the skin on, always begin cooking them skin-side down. The skin provides a protective barrier, rendering out fat and becoming incredibly crispy. It also makes the fish much easier to flip, as the skin holds the fillet together more firmly than the delicate flesh. Once placed in the hot skillet, press the salmon down gently for a few seconds to ensure full contact with the pan and even cooking.
- Doneness is Key: Overcooking salmon can quickly lead to a dry, unappetizing result. The most reliable way to check for doneness is with an instant-read thermometer. The Food and Drug Administration (FDA) recommends cooking salmon to an internal temperature of 145 degrees Fahrenheit. To prevent overcooking, remove the fish from the heat when it reaches about 140 degrees F; it will continue to cook slightly as it rests. Cooking times will vary based on the thickness of your fillets.
- Avoid Overcrowding: If you’re cooking multiple fillets, do so in batches if your pan isn’t large enough. Overcrowding the pan lowers the temperature, leading to steaming rather than searing, which prevents that perfect crispy skin. A large skillet (12 inches or more) is ideal for cooking several fillets at once.
- Clean Between Batches: If cooking in multiple batches, quickly wipe out any burnt bits from the pan with a paper towel (carefully!) and add a fresh tablespoon of oil before cooking the next batch. This prevents off-flavors and ensures a clean sear.
- Achieve Grill Marks: For those aesthetically pleasing grill marks, opt for a ridged grill pan instead of a flat skillet. This will give your pan-grilled salmon that classic “grilled” appearance.

Pro Tip: Invest in a fish spatula! Its thin, flexible head is specifically designed to slide easily under delicate foods like fish, making flipping much simpler and preventing breakage.
Pan Frying vs. Baking Salmon: Which is Better?
The choice between baking and pan-frying salmon largely depends on your desired outcome and available time. Both methods yield delicious results, but they offer distinct advantages:
- Baking Salmon: Opting to bake salmon is excellent for those who prefer a hands-off approach. After a quick prep, you simply let the oven do most of the work, allowing for even, gentle cooking. It’s fantastic for larger quantities or when you’re preparing multiple dishes simultaneously. Baking typically results in a very tender, moist fillet with less direct crispiness, though you can achieve some browning under a broiler.
- Pan-Frying Salmon: If a crispy, golden-brown crust is what you’re after, pan-frying is the undisputed winner. This method creates a delightful textural contrast between the crunchy exterior and the tender, flaky interior. It’s also significantly quicker than baking, requiring only about 3-5 minutes per side, making it an ideal choice for a fast weeknight dinner or when you don’t want to turn on your oven.
Ultimately, neither method is inherently “better” than the other; it’s a matter of preference. However, if speed and that irresistible crispy skin are your priorities, pan-frying, as detailed in this recipe, is definitely the way to go. The versatile seasoning blend used in this recipe is perfectly suited for both pan-grilled and oven-baked salmon, ensuring delicious flavor no matter how you choose to cook it.

Delicious Variations for Your Pan Grilled Salmon
While this recipe for pan-grilled salmon is fantastic as is, don’t hesitate to get creative and experiment with these delicious variations to customize the flavor to your liking:
- Add a Spicy Kick: For those who love a bit of heat, simply add a pinch or two of cayenne pepper or red pepper flakes to your seasoning mix. This will infuse your salmon with a vibrant, spicy warmth.
- Enrich with Butter: After your salmon has finished cooking and you’ve removed it from the pan, add a tablespoon or two of unsalted butter to the hot skillet. Let it melt, then spoon the fragrant melted butter generously over the cooked fish. You can also add some fresh garlic and herbs to the butter as it melts for an extra layer of flavor.
- Explore Other Seasoning Blends: The beauty of salmon is its ability to pair well with many different flavor profiles. Feel free to swap out the recommended seasoning mix for other favorite blends. Try a classic Italian seasoning for a Mediterranean twist, or a bold Cajun seasoning for a more robust and fiery flavor. For a minimalist approach that highlights the salmon’s natural taste, a simple sprinkle of salt and freshly ground black pepper is always a winner.
Pan Grilled Salmon FAQs
Yes, absolutely! To ensure both sides of the salmon are evenly cooked and to develop a beautiful crust, you need to flip the salmon at least once when cooking it in a pan. Typically, you’ll start with the skin side down (if applicable) and then flip to the flesh side to finish cooking.
Salmon generally cooks quickly in a hot pan, requiring about 3-5 minutes per side over medium-high heat. The exact cooking time can vary based on the thickness of your salmon fillets and your desired level of doneness. A good indicator is when the fish turns opaque throughout and easily flakes with a fork. For precision, use a meat thermometer; salmon is done when it reaches an internal temperature of 145 degrees Fahrenheit.
There are a few reliable ways to tell when your pan-grilled salmon is perfectly cooked. The easiest visual cue is to gently press the fish with a fork or your finger; if it separates easily and the flesh appears opaque, it’s done. For the most accurate assessment, use an instant-read meat thermometer inserted into the thickest part of the fillet. The salmon should register an internal temperature of 145 degrees Fahrenheit. Remember, it will continue to cook slightly while resting, so pulling it off the heat around 140°F can prevent overcooking.

Ingredients
- 4 salmon fillets 6 ounces each, skin on, fish should be at room temperature
- ¾ teaspoon salt
- 1/4 teaspoon ground white pepper or ground black pepper see note 3
- 1 teaspoon garlic powder or granules
- 1 teaspoon onion powder or granules
- 1 teaspoon paprika
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 2 tablespoons olive oil
Instructions
-
Pat dry room temperature salmon fillets with paper towel on both sides. This is crucial for a crispy skin.
-
Make the seasoning mix. In a small bowl, mix together the salt, white or black pepper, garlic powder, onion powder, paprika, dried basil and dried parsley.
-
Pour about a teaspoon of the seasoning mix over each salmon fillet. Using your fingers, rub the seasoning mix over the fillets ensuring that the seasoning is well distributed on the fish, including the sides.
-
Place a cast iron skillet or grill pan on medium heat and let it heat up for a few minutes. Add 1 tablespoon of oil to the pan and swirl to ensure the oil coats the pan. Let the oil heat up for 1-2 minutes until shimmering then add the salmon skin side down to the pan. Let it cook on one side undisturbed for 5 minutes or less, depending on the thickness of the fish, until the skin is crispy and golden brown. Avoid overcrowding; I cook 3 fillets at a time in my grill pan and 2 fillets at a time in my 10-inch cast iron pan to maintain heat.
-
Flip the salmon to the other side and let it cook for another 3-4 minutes until the fish is opaque and easily flakes, or until it reaches your desired doneness. Remove the salmon from the pan and repeat the process with any remaining salmon fillets, adding the rest of the olive oil to the pan as needed.
-
(Note: I used fairly thick salmon, which required about 4-5 minutes on the second side. Always watch your fish as cooking times vary with thickness.) The Food and Drug Administration (FDA) recommends salmon reach an internal temperature of 145 degrees Fahrenheit. For optimal juiciness, remove the fish from heat around 140 degrees F, as it will continue to cook as it rests.
-
Serve this Pan Grilled Salmon warm, ideally after resting for 5 minutes, with your favorite vegetable or carb side dish. I particularly love it with sautéed vegetables!

Notes
2. Thoroughly patting the fish dry with paper towels is essential for creating that desirable crispy crust on the outside. Excess moisture leads to steaming, not searing.
3. While I prefer using white pepper with fish for its subtle yet complementary flavor, if you don’t have it, ground black pepper works perfectly well.
4. Avoid overcrowding the pan when cooking Pan Grilled Salmon. Cook in batches if necessary. For a standard 10-inch cast iron pan, I recommend cooking only 2 fillets at once to ensure there’s enough heat to properly sear each piece.
5. This recipe can easily be scaled. If you only need to cook half the amount of salmon, simply halve all other ingredient quantities in the recipe.
